Confetti Cole Slaw  
Ingredients
3 cups shredded green cabbage
1 cup shredded red cabbage
1 1/4 cups shredded carrot
1 small red onion, finely chopped (about 1/3 cup)

Directions
To prepare dressing, in a small bowl, combine the mayonnaise, apple juice concentrate, vinegar, mustard, celery seeds, lemon peel, salt, and pepper. Mix until well blended.
In a large bowl, combine the green and red cabbage, carrot, and onion. Toss to mix well.
Add the dressing and stir until vegetables are evenly coated. Place in a serving dish. Garnish with parsley sprigs and serve.
For the Dressing  
Ingredients
1/3 cup reduced-fat mayonnaise
3 tablespoons frozen apple juice concentrate, thawed
2 tablespoons apple cider vinegar
1 tablespoon Dijon-style mustard
3/4 teaspoon celery seeds
1/2 teaspoon grated lemon peel
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley sprigs for garnish
