Marinated Cheddar and Mozzarella Cheese  
Ingredients
8 ounces fresh mozzarella
8 ounces sharp cheddar
¼ cup pitted green olives, chopped
¼ cup pitted black olives, chopped
¼ cup jarred pimentos, drained and chopped
2 garlic cloves, minced
2 tablespoons parsley, chopped
2 teaspoons Italian seasoning
Black pepper
3 tablespoons extra-virgin olive oil

Directions
Slice cheeses into uniform appetizer-size pieces then alternate on a platter.
In a bowl, stir together olives, pimentos, garlic, parsley, Italian seasoning, black pepper, and olive oil. Pour over cheeses.
Refrigerate cheeses for 2 hours or overnight.
Serve with a variety of breads and crackers.
