| Couscous with Feta & Sweet Peas |

1½ cups of water |

1 cup uncooked couscous |
| • |
¼ cup of olive oil |
| • |
1 tablespoon of fresh lemon juice |
| • |
1 teaspoon of grated lemon rind |
| • |
¾ teaspoon of kosher salt |
| • |
1/8 teaspoon ground red pepper |
| • |
½ cup of crumbled feta cheese |
| • |
¼ purple onion, thinly sliced |
| • |
¾ cup of frozen sweet green peas, thawed |
| • |
¼ cup of chopped fresh mint |

In a saucepan over high heat, bring water to a boil. Remove from heat and stir in couscous. |

Let stand for 10 minutes then carefully transfer couscous to a large bowl. |

In a separate bowl, combine olive oil, lemon rind, lemon juice and salt and pepper. With a fork, stir olive oil-lemon mixture into couscous. |

Add feta, sliced onion, peas and mint to the couscous. Toss gently to combine. |

Cover and chill for 2 hours. |
