Couscous with Feta & Sweet Peas  
Ingredients
1½ cups of water
1 cup uncooked couscous
¼ cup of olive oil
1 tablespoon of fresh lemon juice
1 teaspoon of grated lemon rind
¾ teaspoon of kosher salt
1/8 teaspoon ground red pepper
½ cup of crumbled feta cheese
¼ purple onion, thinly sliced
¾ cup of frozen sweet green peas, thawed
¼ cup of chopped fresh mint

Directions
In a saucepan over high heat, bring water to a boil. Remove from heat and stir in couscous.
Let stand for 10 minutes then carefully transfer couscous to a large bowl.
In a separate bowl, combine olive oil, lemon rind, lemon juice and salt and pepper. With a fork, stir olive oil-lemon mixture into couscous.
Add feta, sliced onion, peas and mint to the couscous. Toss gently to combine.
Cover and chill for 2 hours.
