| Cilantro Butter Tilapia Skillet Fillets |

1/4 tsp salt |

1/4 tsp ground cumin |

1/8 tsp ground red pepper |

4-6 ounces tilapia fillets |
| • |
cooking spray |
| • |
1 lemon, quartered |
| • |
2 tbsp butter, softened |
| • |
2 tbsp cilantro, chopped |
| • |
1/2 tsp grated lemon peel |
| • |
1/4 tsp paprika |
| • |
1/8 tsp salt |

Combine the first three ingredients and sprinkle over both sides of the fish. |

Heat a large non-stick skillet over medium high heat and coat the pan and both sides of the fish with cooking spray. Place the fish in the pan and cook for three minutes on each side, or until it flakes with a fork. |

Place the fish on a serving platter and squeeze the lemon wedges over the fish. |

Place the butter and remaining ingredients in a small bowl and stir until blended, serve with the fish. |
